Sift your baking powder into a mixing bowl. Make sure there are no chunks. You will taste chunks of baking powder.
Whisk or stir your dry ingredients for over a minute, maybe two! Set aside.
Mix your wet #1 ingredients in their own bowl, set aside.
Whisk eggs and sugar together until they are light and foamy. That's probably four minutes by hand or a couple if using an electric mixer.
Eggs and baking powder are the binding and rising agents of this bake. Sifting the baking powder and really getting some foam here really helps the bake.
Combine your wet and dry ingredients. Fold in any toppings like 1/2 cup chocolate chips or blueberries.
Bake at 350°F until they have color on top and a toothpick comes out mostly clean.
